
Case File 1.6: The Correction
After the Crater Incident, it was time to actually learn from my mistakes. Novel concept.
Mission Objective: Fix the hydration. That’s it. Just fix the one thing.
Stealth Level: 7% (backing off slightly)
The Formula:
- 298g puolikarkea vehnäjauho
- 22g oat flour (coffee-grinder pulverized)
- 200ml cellar juice
- No extra water
- 1 tbsp applesauce (reduced from 2)
- 1 tbsp rapeseed oil
- 1 tbsp tumma siirappi
- 1 tsp salt
- 2 tsp yeast
Method: Bread machine, Program 1 (Basic White), 750g setting.
Target Response: “Cronch cronch.” No complaints. No inspection. Bread consumed while doomscrolling.
Assessment: Success. Beautiful dome. Structural integrity restored. The bread held its shape like bread is supposed to. Turns out when you reduce the liquid, the bread stops being soup. Who knew? (I knew. I wrote it down. I just didn’t do it until now.)

Lessons Learned: The 67% hydration is the baseline. Memorize it. Tattoo it somewhere. Stop drowning the bread.
Status: Redemption complete. But can we prove the method works beyond oats?

Case File 1.7: The Swap
Mission Objective: Test the system with a different grain. If this works, we have a repeatable method, not just one lucky recipe.
Stealth Level: 7% (holding steady)
The Formula:
- 298g puolikarkea vehnäjauho
- 22g graham flour (scant 3 tbsp, no processing needed — already fine)
- 200ml cellar juice
- 1 tbsp applesauce
- 1 tbsp rapeseed oil
- 1 tbsp tumma siirappi
- 1 tsp salt
- 2 tsp yeast
Method: Bread machine, Program 1, 750g setting.
Target Response: Son accepted his lunch sandwich with an “ok.” Husband voluntarily chose it for his evening sandwich — reached past other options, selected stealth bread, made sandwich, ate sandwich. Unprompted.
Assessment: Even better than 1.6. The graham flour produced a softer texture and a pleasant slight tang. Almost sourdough-ish, but subtle. No detection. No suspicion. Just bread doing its job.

Lessons Learned: The method is transferable. Different whole grain, same technique, same success. We’re not optimizing one recipe anymore — we’re building a system.
Status: Proof of concept confirmed. The witness protection program accepts new clients.
